Blizzard just released a new stats database, with some top-lists of different items. Of particular note, is this:

which lists the auctions which are most popular.
and to a lesser extent:

Which lists the most gathered items
The AH list means you can get a picture of what is selling, check your own AH and undercut prices there. Combine with any decent AH add-on and you are on your way to profit.
The gathered list, serves more or less the same purpose as the AH list, but also serves as a measure of what might be popular in the future and/or what sells atm.
The best is still to check the AH every day to get a feel for the market, but this serves well, if you need to catch up quick to teh general market
